STARTER: Melting artichoke heart with fresh mint potato cream | Lamb offal (Coratella) Sabina-style, according to a traditional farmhouse recipe | Artisan Corallina salami with homemade rosemary focaccia and fresh Sabina olive oil
FIRST COURSES: Vignarola lasagna with early garden vegetables and Pecorino Romano DOP béchamel | Small ravioli filled with braised ossobuco, with a velvety pea cream and Parmesan sauce
MAIN COURSE: Oven-roasted leg of lamb perfumed with Sabina countryside herbs and fresh Sabina olive oil, served with rustic potatoes and roasted spring onion
DESSERT: House Easter dessert prepared according to tradition and served with care
